Tuatara London Porter and Valrhona Caraibe 66% shot AND Scallops poached in Archer McRae Pinot Noir with crisp ginger, grated Valrhona Manjari 64% and a swede puree with an Entree of Waikanae chorizo sausage lasagne with Valrhona Guanaja 70% mole

Main

Wairarapa venison chop and Valrhona Araguani 72% scented mini hunters pie, topped with mashed potatoes and served with green beans and shaved hazelnuts

Dessert

Mille-feuille of Valrhona Ivoire parfait and Kapiti mascarpone with Ivoire mousse and a bitter orange salad
